A yummy and healthy snack or dessert for the entire family. Kids love snacking on individual “dunkers” which can be paired with your favorite yogurt or dipping sauce. You can also eat it with a spoon just like granola or put it right in a satisfying smoothie! Allergy friendly alternatives included.
Makes about a dozen dunkers 1 cup rolled oats (can sub gluten free oats if needed) 1/2 cup almond or peanut butter (sunflower seed butter if allergic to nuts) 2 tablespoons melted coconut oil 2 tablespoons maple syrup (or honey based on preference) 2 tablespoons chocolate chips (sub enjoy life brand mini chocolate chips for dairy free) 1/4 to 1/2 cup chia seeds 1/8 teaspoon fine grain sea salt 2/3 cup coconut flakes (optional) In a large bowl, mix the oats, nut butter, coconut oil, maple syrup, chocolate chips, chia seeds and salt with your hands. This is a great way to get kids involved. Place in the fridge to chill for 30 minutes then roll into individual dunkers (about a heaping tablespoons worth). Can be stored in an airtight container in the fridge for one school week :) enjoy and happy holidays!
